This is our very first coffee to come from Peru, sourced with our importing partner Cofinet. We have worked with Cofinet for several years, focusing on the company’s native Colombia, and have always been drawn to their focus on quality and traceability. As Cofinet has begun to apply this approach outside of Colombia, we have been interested to see what they bring to Europe, and have not been disappointed. This particular coffee has been sourced directly from the renowned Wilder Garcia.
Wilder Garcia is a third generation coffee producer from Jaén, in the Cajamarca region of Peru, whose 23 acre farm is situated at an altitude of 1700m to 1950m. In a region already flourishing with high quality coffee production, this particular farm is afforded a unique microclimate, which in turn allows each varietal its own subplot, and Wilder Garcia the chance to focus on the growing of each individually. Thanks to this natural phenomenon, the farm is known for its production of single varietals such as geisha, pacamara, and this bourbon.
Wilder Garcia’s work balances his endeavour for quality with his efforts to maintain both social and environmental responsibility. Throughout the farm we see innovative methods being applied, whether they be for the exotic varietals or for more traditional lots such as Typica or Catimor.
New spacing systems create a better environment for each individual coffee tree to thrive, and to make the most not only of what the Sun can give it, but also the soil. The introduction of skeletal pruning has been another step forward for the farm, where the lateral branches of the tree are cut in order to allow the growth of productive branches, thereby reinvigorating the tree’s health and productivity.
One of the things we prioritise when selecting coffees, notably for espresso, is texture, and this coffee’s texture is what made it stand out on the cupping table. Super viscous with a lingering honey sweetness, the Wilder Garcia balances a fruity sweetness with a floral acidity. An incredibly clean cup, with notes of jasmine, peach and red apple, this coffee is as comforting as it is complex.
